Cupcakes r yum had the very difficult choice of deciding the winner for the most creative cupcake of the week. After much debate we have decided to award this to Mrs Costillo for her BBQ Cupcake.

The Winner of the Creative Cupcake of the Week

The winning cupcakes are cute and innovative cupcakes.

The idea that Mrs Costillo suggested when she delivered them to the store for judging was to use them for a themed party, clearly a BBQ party/park party. This would be a cute idea for a boys or big boy’s party.

I did some further research into the great idea and have found some other similar themed cupcakes which are very cute and all vegetarian of course. Originally it is believed that BBQ cupcakes started out as  “farmhouse barbecue muffins” and these gradually become know BBQ Cupcakes.

Here is an interesting concept for a BBQ flavoured cupcake…yes I know sounds strange but it tastes delish. The All American BBQ cupcake.  Basically this is a chocolate cupcake with the additional  ingredient – liquid smoke. The liquid smoke gives the chocolate a fantastic smoky smell and taste. The frosting is a sweet corn cream cheese frosting.

The Smoky Chocolate Cupcake Recipe (makes 16 Cupcakes)

I added liquid smoke to our  favorite chocolate cupcake to make this recipe.

Liquid Smoke

Ingredients

  • 1 1/4 C sugar
  • 2 large eggs, room temperature
  • 1/2 C (1 stick) butter, room temperature
  • 3/4 C flour
  • 1/2 t baking powder
  • 1/4 t baking soda
  • 1/4 t salt
  • 1/2 C unsweetened cocoa powder
  • 1/2 C milk
  • 1 t vanilla
  • 2 t hickory flavored liquid smoke

Method

  1. Beat butter until softened
  2. Add sugar and beat until light and fluffy, about 3 minutes
  3. Add eggs, one at a time, beating until well combined
  4. Measure the flour, baking powder, baking soda, salt, and cocoa powder into a small-sized bowl and whisk to combine
  5. Measure out the milk and vanilla and stir to combine
  6. Add about a third of the dry ingredients to the butter/sugar and beat to combine
  7. Add about half of the milk/vanilla and beat to combine
  8. Continue adding, alternating between dry and wet and finishing with the dry
  9. Add liquid smoke
  10. Scoop batter into cupcake cups about 1/2 full. These cupcake will not dome. If you fill them too high, they will just collapse
  11. Bake at 350 degrees for 22-25 minutes or until a toothpick comes out clean

The Sweet Corn Cream Cheese Frosting Recipe

Ingredients

  • 1 15 oz can corn
  • 8 oz cream cheese, room temperature
  • 1/4 C (1/2 stick) butter, room temperature
  • 3 C sifted powdered sugar

Method

  1. Cream the butter and cream cheese
  2. Drain any liquid out of the corn and food process it until it becomes a big corn mush
  3. Add the corn to the butter and cream cheese and mix well
  4. Mix in the powdered sugar

Easter Cupcake Couture

 

Cupcakes r yum will feature a variety of Easter cupcakes.

Ingredients

  • A cupcake (baked from your favourite recipe)
  • White icing
  • Shredded coconut
  • Pink decorators’ sugar
  • Jelly bean nose
  • Chewable Sweet Tart eyes
  • Large marshmallow
  • Mini marshmallows

 Instructions

  1. Frost a cupcake (baked from your favourite recipe) with white icing and sprinkle on shredded coconut fur.
  2. Cut a large marshmallow in half. Squeeze each half slightly to give it an oval shape, then decorate the sticky side of each one with pink decorators’ sugar and set them in place for ears.
  3. Add a jelly bean nose and either jelly bean or snipped Sweet Tart eyes, and mini marshmallows for cheeks. For a finishing touch, draw on decorators’ gel pupils or whiskers if you like.

Too Cute!

Not only does Cupcakes r yum raise money for the worthwhile charity ‘End Poverty.’ We also like to support issues closer to home. 

In consideration of the flooding in Queensland, we would like to recognise the animals that were affected by this natural disaster. Countless animals (domestic, wild and farm) fled their homes and were either caught in flood waters, have become lost or have been injured because of this natural disaster. The RSPCA has, as always gone above and beyond the call of duty to rescue distressed and injured animals.

While the animal welfare organisation was helping animals, including horses, around flood-affected parts of the state, it faced a crisis of its own, with the Fairfield shelter in the flood firing line.

The RSPCA is exempt from disaster relief funds offered to other charities that assist human needs, this makes the RSPCA entirely reliant on the generosity of the Australian (and international) community to help the RSPCA get back onto their feet,  and continue to help the 42,000 animals who rely on the RSPCA each year.

The charity has appealed for donations to its Flood Recovery Appeal to help rebuild, refurnish and recover from the flood that wiped out several buildings, equipment and supplies at the shelter.

……..So Cupcakes r yum is donating all proceeds from the RSPCA Cupcake Day to the RSPCA. Check out our Facebook  page to find out how you can play a part in this worthwhile charity.

Agent Provacateur Cupcakes

Yes I know, who would have thought cupcakes could be so chic?  

  • Cupcakes r yum have worked on various fashion house events. This week we have featured as an afternoon treat during the Louis Vuitton, Chanel, Christian Louboutin and Agent Provocateur afternoon preview parties during the Paris Fashion Week.

Paris Fashion Week is part of the Big 4 fashion weeks internationally. We are hoping to be able to secure other catering deals at the London, Milan and New York Fashion Weeks. For us it is inspiring to be in such close proximity to other creative industries.

As mentioned on Loilé Blog’s, Cupcakes r yum and Teatock will be serving tea and cupcakes. Both teams at Teatock and Cupcakes r yum have been working together for some time to create a synergy between our respective services that will be showcased at Loile’s New Collection Launch. Our cupcakes will not only look the fashionable part they will complement the various teas available at this event.  The event my even feature the Japanese Springtime Green Tea Cupcake…But you will have to come along and find out.

Ok so I said that I would detail the weekly cupcake, Cupcakes r yum will feature for this week the CHOC CHERRY CUPCAKE….

Choc Cherry Cupcakes

 

Ingredients

  • 250g (9oz) cherries, pitted
  • 150g (5oz) plain flour
  • 2tbsp cocoa powder
  • 2tsp baking powder
  • 40g (1 1/2oz) caster sugar
  • 1 large egg, beaten
  • 125ml milk
  • 50g butter, melted and slightly cooled

For the topping

  • 150g plain chocolate, broken into pieces
  • 142ml double cream

Method

  1. Preheat the oven to 200°C/390°F/gas mark 6. Put 10 paper muffin cases into a muffin tray. Take 10 of the cherries and put to one side for decoration then roughly chop the rest.
  2. Sift the flour, cocoa powder and baking powder into a large bowl. Stir in the sugar then gently toss the cherries into the flour mixture. In a separate bowl, mix together the egg, milk and melted butter.
  3. Make a well in the center of the dry mixture and pour in the egg mixture, quickly folding it into the flour.
  4. Divide the mixture between the muffin cases. Bake in the oven for 15 -20 minutes until the cupcakes have risen. Transfer to a wire rack and leave to cool. (If the cupcakes have risen above the cases, slice off the tops – the gap will be filled with the chocolate icing)
  5. Meanwhile, put the chocolate into a pan with the cream and bring to a boil. Remove from the heat and beat until thick and smooth. When the cupcakes are cold, pour icing over each one so it reaches the top of the case. Decorate with a cherry.

Everyone needs a good basic cupcake recipe to create the perfect cupcake (this recipe makes 24).

This is a tried and tested Cupcakes r yum base for perfect cupcakes, please try us out on this proposition, we guarantee you will agree.

 

Cupcakes r yum Basic Cupcake Mixture

Ingredients

  • 250g (8oz) unsalted butter, softened
  • 250g (8oz) caster sugar
  • 250g (8oz) self-raising flour
  • Pinch of salt
  • 4 medium eggs
  • 4 tablespoons milk
  • Ice-cream scoop (optional)
  • 2 x 12-hole muffin tins, lined with paper cases

 Method

  • Set the oven to 190°C or Gas Mark 5.
  • Tip the butter into a bowl and beat it until softened. Add the sugar, flour, salt, eggs and milk and whisk until the mixture is smooth.
  • Use a traditional ice-cream scoop, or spoon, to divide the mixture between all the paper cases.
  • Place both muffin tins in the oven and bake for 15 minutes, then swap over the position of the tins over and bake for a further 3-7 minutes, until both trays of cupcakes are a light golden colour.
  • Remove the tins from the oven. Leave the cupcakes to cool in the tins for a few minutes and then transfer them to a wire rack to cool.

There you have it, the perfect cupcake base!
